Raw Lime Pie

(Serves 5)pie

Crust

  • 2 Cups of Pecans (soaked for 2 hrs)
  • ½ Tsp of Ground Nutmeg
  • ¼ Tsp of Black Pepper
  • ¼ Tsp of Pink Himalaya Salt

Filling

  • ½ to 1 Avocado (depending on size)
  • ½ Cup of Coconut Water
  • Coconut Meat from 1 Coconut
  • 4 Tbs of Fresh Lemon Juice
  • 4 Tbs of Fresh Lime Juice
  • Vanilla Bean
  • ½ Tsp of Pink Himalaya Salt
  • ¼ Tsp of Stevia or Raw Organic Honey
  • 1 Tsp of Psyllium Husk Powder

Process all crust ingredients in a food processor or blender. Press into a pie plate and chill. Process all filling ingredients in a blender until smooth and creamy. Add psyllium and mix. Pour filling into crust and chill for a few hours. Cut, serve and bliss out!
